Serves 4-6
3 cups day old jasmine rice
3 egg yolks
4 tablespoons salted butter
2 tablespoon minced garlic
4oz Andouille sausage
4oz shrimp
8oz Crab meat
1/2 cup sweet onion (small dice)
1/2 cup green bell pepper
1/2 cup celery
1/2 tablespoon old bay seasoning
1/2 teaspoon Creole seasoning
1/2 teaspoon paprika
1/2 teaspoon cayenne chili powder
1/2 teaspoon black pepper
1 tablespoon vermouth
1 teaspoon Worcestershire sauce
Salt as needed
Optional garnish: Green onions
Instruction
1. Start by adding egg yolks to your rice. Give it a mix until every grain is coated then set aside
2. Next add 2 tablespoons butter to a pan on low heat followed by minced garlic. Fry on low until fragrant then combine andouille sausage, shrimp continue to cook until the shrimp is par cooked
3. After that add the crab meat, mix everything together until the crab is warmed through Then season with salt and black pepper to taste
4. In a separate pan melt remaining 2 table spoons of butter, then add the holy trinity of celery, green bell pepper, a pinch of salt.Sweat everything down until the vegetables are softened
5. Next combine the Cajun Spice blend let that Toast on low for a few seconds then add vermouth, Worcestershire sauce give it a mix Followed by the rice and cooked seafood.
6. Toss everything together. Give the rice a taste and adjust the seasoning with a pinch of salt if necessary.
