Let’s learn how to trim a brisket for backyard bbq, no fancy competition cut here. As you trim the edges to have consistent fat content and thickness, use this opportunity to harvest the meaty trim that we”ll use in a burger blend and the pure fat that we”ll use for beef tallow. Always cut the pure fat for the beef tallow into small pieces so it renders faster. Collect the beef fat in freezer until you’re ready to make your tallow. Throw the burger trim into the freezer then pull it out when you’re ready to make your burger blend. Videos on how to make the burger blend and beef tallow are on my channel. Use Sherwood’s Garlic Confit Purée as a binder, cover the entire brisket so the seasoning sticks to the brisket and season heavily. Place in the fridge overnight so it’s ready to be smoked tomorrow.
