Cooking Beef Leftover Stew @ Home (Chinese Style Recipe)

Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Chinese recipes.
A heart warming dish for your family and friends, or just for yourself!
Ingredients:
3 carrots
250g Beef leftover from a roast
2 potatoes
1 Tbsp sugar,
1 spring onion,
0.5cm ginger,
4 cloves garlic,
0.5 Tsp ground red pepper (Sichuan pepper)
2 Tbsp dark soy sauce
1 Tbsp cornflour in 20ml cold water
Methods:
Cube the beef into bite sized pieces
Chop the carrots & potatoes
Chop the ginger, garlic & spring onion
Place the carrots and potatoes into a pan
Boil for 15 to 20 minutes until soft
Remove from heat and drain
Heat 2 Tbsp oil in a wok
Add garlic, ginger, ground red pepper and half of the spring onion & fry for few seconds
Add beef, carrots & potatoes & stir fry for few seconds
Add the soy sauce, stir fry for a minute
Add 50ml of boiling water
Add salt to your taste and sugar
Stir and simmer for 2 minutes
Pour in cornflour mixture to thicken the liquid
Stir until the liquid is thickened
Sprinkle the rest of the spring onion
Transfer onto a dish and serve
