_*Yes, this still works on the latest 1.20 [December 7th, 2023] patch!*_
This skip works the same way as it did after 1.05 even after 1.10, exactly as done in this video.
Despite the patch fixing the scope exploit and _some_ crouch clipping, you can still pull off this trick to skip the Mendez boss fight on any difficulty.
The down side being that it's much easier to soft-lock yourself compared to before which is kinda funny when you think about it.
Attempt at your own risk! Recommended to save beforehand.

I am sure there are other angles that work to do this skip, however this is the one that worked best for me when testing it.
While holding down, interact with the merchant and back out of his menu.
With down still held Leon will begin to shift to the right on his own, from here he'll either:
A.) speed up which is when you want to interact again
or like in my setup in this video
B.) Slow down, to which a quick tap right followed by interacting should do it.
If you've done it right, Leon will either be behind the wood planks, or the wood planks will be blocking your camera. From here progress up the rocks like you'd normally do in the skip pre-patch.
If you are early to interacting a second time, attempt to strafe left to try again. DO. NOT. AIM. YOUR. WEAPON/KNIFE. Doing so will shove Leon to the right soft-locking you. Sometimes Leon will still zip to the right and soft-lock himself regardless. If you time it late you'll solf-lock yourself placing Leon next to the merchant.
