You can substitute carrots for tomatoes when making Nigerian stew and believe me no one will be able to tell!! Actually, I dare say that carrot stew is even better! This is one tasty and delicious stew/sauce you should try. You might be sceptical but try it today and see how you will love it 🥰 INGREDIENTS -Carrots -Sweet red bell peppers -Red bell peppers -Scotch bonnet pepper -Onions -Garlic -Ginger -Chicken or any protein of choice -Vegetable oil -Broth SEASON PROTEIN WITH: -Garlic powder -Seasoning cubes -Chicken seasoning -Onions -Black pepper -Salt SEASON SAUCE WITH: -Seasoning cubes -Curry -Parsley -Black pepper -Paprika -Salt PROCEDURE Begin by washing all the vegetables and meat. Blend the carrots and pepper mix smoothly and set aside. Season the meat and cook on medium heat for 15 minutes before adding water. Cook for another 20 minutes, separate the meat from the broth and set them aside. Heat up some vegetable oil in a pot and pour in the carrot/pepper mix. Stir-fry until the oil is separated from the sauce and the sauce has become dark red. While stir-frying add the seasonings written above. Frequently stir the sauce to avoid burning. When the sauce is well fried, pour in the broth, stir and add the chicken. Cover the pot and cook this for approximately 35 minutes, stirring at intervals to prevent burning.
