Favorite food of Giyu Tomioka from Demonslayer, UMAI! The only time i saw Giyu smile was after this Meal haha Song by @Khantrast Recipe: -300g Salmon -1/2 large Daikon or Radish -20g ginger -400ml Water -4 tbsp Soy Sauce -4 tbsp Mirin -3 tbsp Sake -1 tsp instant Dashi Stock -3 tbsp Sugar -1/2 tsp Salt Toppings: -Green Onions -Ginger 1. Cut filets into 3 pieces, salt, blanch in boiling water for a couple seconds. Remove from water and set aside. 2. Cut ginger thinly, like matchsticks. Cut Daikon radish into thick rounds. Peel and cut into halves. Round off the sharp edges. Boil Daikon in a pot for 15 min. until easily pierced with a toothpick. Strain water and set aside. 4. In a medium pot, add water, Soy Sauce, Sake, Mirin, Sugar and let it boil. Add fish, Daikon and Ginger. Cover with parchment paper (Otoshibuta) and cook 20-25 minutes. Cool completely. Serve at room temperature or reheat. Why a Otoshibuta(drop-lid)?: They ensure that the heat is evenly distributed and reduce the tendency of liquid to boil with large bubbles. This reduces the mechanical stress on the food and keeps fragile ingredients in their original shape.
