This video demonstrates the preparation of a saddle of lamb into two half saddles of lamb. The first is prepared with the fillet added sealed using vac pac. The second is prepared and rolled into a half saddle joint. The second video in our butchery series demonstrated by Chef Graham Garrett of The West House Restaurant with Rooms, Biddenden, Kent.
