Carrot & Cucumber Achar (Indian) | Acar Lobak Merah & Timun (India)

Ingredients: ◾️2 cucumbers deseeded and cut into 1 inch thick strips with skin in tact (2 timun dibuang biji dan dihiris tebal 1 inchi) ◾️1 carrot cut into 1 inch thick strips (1 lobak merah dihiris tebal 1 inchi) ◾️1 red and 1 green chilli deseeded and cut into one inch strips ( 1 cili merah dan 1 cili hijau dibuang biji dan dihiris 1 inchi) ◾️1 lemongrass cut into 1 inch (1 serai dipotong tebal 1 inchi) ◾️1 thumb sized ginger cut into 1 inch strips (1 halia saiz ibu jari dihiris tebal 1 inchi) ◾️6 garlic each cut into 3 (6 biji bawang putih dipotong tiga) ◾️10 shallots - use a knife and remove the root area (10 bawang merah kecil - gunakan pisau dan buangkan bahagian akar) ◾️a few dashes of vinegar (cuka mengikut rasa) ◾️oil (minyak) ◾️4 1/2 soup spoons of light brown sugar (4 1/2 sudu sup gula perang) ◾️1 heaping teaspoon mustard seeds (1 sudu kecil penuh biji sawi) ◾️1 heaping tsp turmeric powder (1 sudu kecil penuh serbuk kunyit) ◾️1 soup spoon chilli powder (1 sudu sup serbuk cili) ◾️1 soup spoon ground chilli (1 sudu sup cili giling) ◾️2 sprig curry leaves (2 tangkai daun kari) ◾️2 tsp salt (2 sudu kecil garam) Image by Andrew Martin from Pixabay
