Today I'm kicking off a 3-part video series reviewing the KitchenAid 6-Qt Slow Cooker. In this first episode I make pulled pork.
Ingredients:
4-5lb pork butt (shoulder)
1 onion
5 cloves garlic
3 sprigs of thyme
Your favorite pork rub
6-oz can pineapple juice
Worcestershire sauce
Liquid smoke
Butter
Olive oil
Apple cider vinegar
Barbecue sauce
Red pepper flakes
Potato rolls
Cole slaw
Baked beans
Directions:
Rub pork butt all over with your favorite rub.
Sauté chopped onion and garlic together in butter and olive oil.
Add thyme and cook until onions are soft. About 3-5 minutes.
Add a little olive oil to slow cooker to help prevent sticking.
Add sautéed onions, garlic and thyme to slow cooker.
Place pork butt on top of onion mixture.
Pour in 6-oz can of pineapple juice.
Add a few dashes of Worcestershire and liquid smoke.
Place on lid.
Cook on Low Heat for 9-10 hours.
Remove pork from slow cooker.
Pull apart with two forks.
Make vinegar sauce:
Mix together 1/4 cup of apple cider vinegar, 2 tablespoons barbecue sauce and 2 teaspoons red pepper flakes.
Ladle vinegar sauce over pulled pork.
Warm up a potato roll in the microwave for 10 seconds.
Put some pulled pork on the the roll.
Top with cole slaw.
Serve with a side of baked beans.
