GTA 3 - S.A.M. - How to destroy the plane early

I saw this trick in speed runs. It allows you to destroy the plane in the mission "S.A.M." before it gets anywhere near the airport. I would have used the Dodo to fly back to the construction site straight away if it hadn't been destroyed.
